Bright and clean, high intensity. Deep purple with edging bluish. Colored, abundant and dense tear.
Nose:
Intense undergrowth and balsamic aromas (thyme, rosemary, mint) mixed with citrus (grapefruit, orange peel) and fruit aromas (peel of peach), all balanced with spicy notes of new wood and mineral bottom.
Mouth:
With fresh sensations from the start, it develops a great volume and structure with memories of its passage through the barrel at the end of the tasting. Not it has edges, it is round and silky of great amplitude, with tannin present but fine and elegant. Very fresh and elegant. Spectacular.
Serving temperature:
It is recommended to serve at 16 ºC.
Pairing:
Cured sheep and goat cheeses. Suckling pig and lamb meats. In general fatty meats that are enlarged due to the fresh counterpoint of this came. Its star dish is the grilled Cantabrian turbot.
