Nose:
It exhibits a wide aromatic palette with hints of black fruit, dry grass and balsamic accents that send us back to the Highlands.
Mouth:
With a prodigious balance between volume and freshness, it refreshes and fills your palate.

It is recommended to serve at 16 ºC.

Grilled rabbit, grilled lamb chops, mountain rice, grilled tuna, baked swordfish, honey and cottage cheese.

Description:

Vineyards planted on natural terraces formed by the old flow of a river, currently underground. They are located between 320 and 370 meters of altitude, on the slope of the Tierra Alta facing west, facing away from the sea, which favors insolation and ventilation.

 

 

Age:
The oldest vines (40-60 years old) are from Grenache red, while those from Syrah were planted 10-15 years ago.
Ground:
Calcareous, with a clayey and loamy-clay texture, predominates, although in some areas the "honeycomb" (fossil dune) is distinguished and in others boulders appear.
Weather:

Mediterranean climate, with a strong continental influence, marked by little rain, many hours of sunshine and a wide thermal oscillation between day and night, and the influence of two winds allows the healthy grape to be preserved in the vineyard and the harvest when the fruit is at its optimum degree of maturity.

Harvest:
The harvest is done manually.
Vinification:

Elaboration of the different varieties separately. Careful vinification plot by plot. Fermentation with three daily pigeages.

Aging:

Aged for 6 months in 300-liter Central European oak barrels.
