Description:
Vineyard located in the Valladolid municipalities of Valbuena and Pesquera de Duero within the Jaramiel stream valley, between 850 and 900 meters above sea level. The vines are located on slopes with east-west orientations and lines directed from north to south.
Age:
Vineyards planted from 1987 to the present.
Ground:
Terrain of a sedimentary nature, of the clay-calcareous type with abundant outcrops of thick materials that limit production and reinforce the character of its wines.
Weather:
Extreme continental, with a low rainfall. Dry summers and very long, rigorous winters, with a frost-free period of less than 140 days a year. Very strong thermal oscillation, both daily and seasonal.
Yield:
4,000 kilograms hectare.
Harvest:
It is done by selecting at the foot of the vineyard only those very mature and healthy clusters, which are transported to wineries in boxes of 20 kilograms.
Vinification:
Controlled fermentation in stainless steel tanks.
Aging:
The wine goes into barrels without being filtered or previously clarified (that is, in the vine). It remained in those barrels for 12 months, during which time it was racked 3 times. 20% of these barrels are renewed annually.
