An intense and seductive red, equal parts blend of Cariñena and Garnacha from the surroundings of the town of Torroja del Priorat. Traditional, slow and smooth winemaking, with the grapes without de-stemming, spontaneous fermentation with indigenous yeasts and without mechanical interactions. The result is interpreted as a fine, complex and fluid expression of the different terroirs with which they work.

Description:

Different vineyards located in the town of Torroja del Priorat at 400 meters of altitude.

 

 

Age:
Between 25 and 40 years.
Ground:
Slate for Carignan and slate-clay for Garnacha.
Weather:

Mediterranean with continental influence.

Yield:
3.000 kilograms hectare.
Harvest:
Manual harvest carried out in small boxes of 10 kilos.
Vinification:

Traditional winemaking in the style of Burgundy. Without stemming, the grapes are taken to a tank. When it is full, it closes and waits until the fermentation starts spontaneously. Use of indigenous yeasts. The grapes remain at a temperature between 20 and 28ºC for a short and dynamic fermentation. When the fermentation is complete, the grapes are pressed to remove all the sugar from the whole grapes and then fermented dry in a second fermentation without the skins.

Aging:

The aging takes place for approximately 12 months in Austrian Stockinger wooden casks.
