GRAMONA INFANTERRIBLE

Surprising "ice wine", produced by Gramona, a winery of great tradition and prestige in Penedés, founded in 1921. In the style of the great German Eisswein, although in this case, due to the weather, the Xarel vines are artificially frozen · Lo to obtain a nectar of intense yellow color, with aromas of lime, grapefruit, pineapple and ripe mango. The palate is intense and creamy, with a perfect balance between sweetness and acidity.

The grape comes from Can Claramunt, a plot worked on biodynamics and cultivated by "Aliances per la Terra."

Subtle at the start. With oxygenation it becomes more expressive. Floral notes, citrus memories -lime, grapefruit skin-, exotic fruits -ripe pineapple and mango-, table grape, vine peach-, acacia honey.
Mouth:
A pleasant attack, creamy and glyceric mid palate, a sustained acidity finish that provides freshness and freshness.

Description:

Gramona Ice Wine was born in 1997. Currently, and after years of research, this wine is made with a new prototype and the support of two cold rooms. We cool the grapes that go from + 25ºC to + 5ºC to prepare it for subsequent freezing at 6ºC or 8ºC, depending on the concentration of sugars and with the help of liquid nitrogen.

This improves the freezing of the grapes, thus achieving more speed and homogeneity in the process. The must continues to ferment in 300-liter barrels for 2 months. This fermentation takes longer than usual due to the high concentration of sugars. As a result, we obtain highly concentrated, sweet and refreshing fruity wines at the same time.

Based on the careful observation and treatment of the factors that influence our land and its habitat. We do not apply herbicides or chemical pesticides, we use natural resources with the main objective of preserving the balance of the environment and we maintain spontaneous vegetation covers to achieve spongy soils.

Through biodynamics, a step beyond ecology, we vivify our vineyards and seek to raise their levels of biodiversity: we apply infusions and decoctions of plants to avoid pests, and we make our own preparations and our own animal and vegetable compound from our medicinal plant garden and our cow, sheep and horse farm.
